Why is it when ever my current fiance asks me a question, and I answer it, he thinks I'm not giving him enough information or I'm being vague or I'm trying to hide something from him? I always try to be completely honest, but he seems to think I don't answer his questions and straight away get up set, angry and run away. I only run away because he does these things. What do I do??

Your fiance might have a paranoic personality disorder. This is his problem and not your fault. It is extremely difficult to live with such a person.
